Homemade falafels

You will need (3 portions):

  • 250g canned chickpeas
  • juice of ½ lemon
  • a dozen of fresh parsley, washed and sliced
  • crushed garlic clove
  • ½ tsp ground cumin
  • 2 tbsp wholemeal flour
  • salt and pepper (optional, for the taste)
  • 1 tbsp olive oil

Put chickpeas, garlic clove, parsley and wholemeal flour to the blender. Add lemon juice, cumin, salt and pepper and mix together in the blender until well combined. Make small balls out of the mixture and set aside.

Heat the pan and add a tablespoon of olive oil. Fry the balls on a medium heat until golden in colour (approximately 4 minutes each side).

To serve, you can toast a wholemeal wrap and put on it some goat cheese, olives, sun-dried tomatoes or any other vegetables you find in the fridge. Add falafels and top up with crushed parsley. Enjoy!
